Roasted Delicata Squash with Fennel and Blue Cheese
Yield: 6 servings as a side dish
- 2 pounds Delicata squash
- 1 large fennel bulb
- 2.5 ounces blue cheese
- olive oil
Preheat oven to 375. Wash Delicata and slice lengthwise. Scoop to remove seeds and cut into 1/3” slices. Wash and slice fennel in similar-sized pieces.
Toss squash and fennel with oil and a pinch of salt in a bowl. Place mixture on baking sheet and roast until golden and tender when pierced with a fork. Once cool, garnish with blue cheese. If desired, serve on bed of greens with maple vinaigrette.
